Welcome back to the latest food challenge where I make a dish that starts with the same letter as the Monster Energy NASCAR Cup Series champion of the week.
We were all sad to see Harvick head to the garage so soon after three wins in a row, but I was glad that most of the rest of my fantasy team finished in the top ten. This week I chose Kurt Busch, Joey Logano, Clint Bowyer, Kyle Larson, and Kyle Busch. Last week I really paid attention to driver’s stats when picking my team, but this week I just looked on a fantasy blog for ideas. I’m still figuring fantasy out. Any tips?
My Harvick Honey Muffins from the race in Las Vegas turned out pretty good. I added some dried cranberries for color and more flavor! When I realized we didn’t have enough honey, I substituted maple syrup. Delicious! Anyone try these yet?
I got behind and still need to make some hash browns to celebrate Harvick’s third win at the ISM Raceway!
This week I’m going to use some venison meat seasoned with my homemade taco seasoning spooned over lots of veggies. You can buy the gluten-free taco mix, but it’s more fun to make it at home in an empty spice container. If you don’t use the exact amounts, it’s okay! Feel free to add more or less depending on how spicy you like your tacos! I like to use this on my scrambled eggs too.
- 1/4 t. garlic powder
- 1 t. dried onion flakes
- 1/4 t. red pepper flakes
- 1/4 t. oregano
- 1/2 t. paprika
- 1/2 t. cumin
- 1 t. salt
- 1 t. pepper
